Borlottis have been called the Ferrari of Italian beans. These plump, red-speckled beans cook to a glorious soft and silky consistency that is wonderful in soups and casseroles.
This climbing variety is great for small gardens and looks beautiful when the red and white candy-striped pods are ripe. The beans themselves can be eaten fresh as shellouts or dried for nourishing winter meals.
Plant in spring when the soil is warming and all risk of frosts has passed.
