Christmas Spice Cookies

One blend to rule them all! Ingredients

2 1⁄4 cups plain flour
1 tablespoon Kakariki Kitchen Cookie, Cake & Cup Spice Blend
150 grams brown sugar
1⁄2 teaspoon baking soda
125 grams softened butter
1 egg
1⁄3 cup golden syrup

Method

Heat the oven to 180ºC. Place flour, spice blend, sugar, baking soda, and butter in a blender and mix. Add the egg and golden syrup, and blend again until just combined. Cover the mix and rest for 30 minutes.

Roll the cookie dough on a well-floured surface to approximately 5mm thick. Use your favourite cutter to shape your cookies and lay them on a lined baking tray.

The cooking time will vary depending on the size of your cookies. For a soft centre, cook until edges are golden. For a firmer cookie, cook until all of the cookie is a light golden colour.
